When it comes to healthy cooking my motto is ‘the easier, the better.’

I’m not a fan of recipes with two million ingredients.

You know what I mean: when you’re excited to bake some vegan cookies on a lazy Sunday & the recipe casually calls for xantha gum?

Like, WTF is xantha gum anyway? I mean, I’m sure it’s delicious but it’s not exactly an accessible ingredient ( at least not for me! ).

Any healthy recipe with more than six ingredients tends to entail a lot of time/effort/money.

And heyyyy! I’m all in to getting crazy in the kitch when there’s time, but lately there’s been none. Besides if you’re anything like me, ya keep it simple & clean.

My friend, Mike & I made this salad last week & I’ve eaten it every day since…Hence the name: ‘The Best Salad on Planet.’ I wasn’t going to even post this right away, but after sharing this picture, many of you asked for the recipe. Your wish is my command.

So anyway, guys will fall in love, birds will sing, & bells will ring over this salad. Because honestly? It’s kind of, sort of life-changing.

Trust me, guys- it’s THAT good.

A Lil Poolside Salad

Lauryn Evarts, food blogger and fashion blogger, shares a salad that's skinny & delicious!

Lately it feels like summer in San Diego. Between the insanely beautiful weather & the delish fruit, I’m definitely ready to chill poolside with a book, an oversized hat, & some gnarly SPF ( << wrinkles! Protect your skin!! ).

Many of you have asked if I’m a big fruit person. Answer: abso-Fing-lutely. ESP when it’s in season.

So it’s no surprise that I’ve been incorporating fruits into salads as much as possible. I’m game for anything: pomegranate seeds, blood oranges, kumquats, white peaches, &/or grapefruit slices. This salad below is one of my favs; you can’t go wrong with avo & watermelon!

Again, I cannot stress this enough: healthy eating is not supposed to be some complicated Rubik’s cube. I mean, there’s absolutely no reason that you should have to think twice about it. It’s one of those things that once ya get it, ya get it.

Eat clean & keep it simple!!

Lentils: A Total Power Food with Tons of Sexy Benefits

Lately I’ve been crazzzzzy over lentils!

Doctor Oz. says that lentils are one of the top three foods that make you, uh, well, go to the bathroom. You know, you know…help you to flush your system out ; ).

TMI?

Anyway, these ugly, little beans are full of sexy benefits. To name a few:

+ Protect your boobies (!!!): lentils contain more important B vits than any other plant food. Vitamin B6 helps reduce women’s risk of developing breast cancer!

+ Fiber: this makes the digestive system “clean out.” Fun shit. Literally.

+ Impressive amounts of iron & protein: the beans are filled with iron & protein.

+ Anti-aging: superfoods like lentils provide anti-aging benefits.

 + A natural weight-loss food: they reduce the appetite because they’re filled with fiber. Buh-bye temptation!

See?! They’re amazing!

Add them to: salads, sweet potato soup, curry, stew, pasta, eat them plain, &/or try this carrot/onion/celery soup I made on Monday night ( note: naturally I added lemon to the recipe ).

So puh-lease! Next time you’re in the bean section, don’t ignore the poor lentils!
