When I was little, my dad owned a Southwestern-style restaurant called Cilantro’s. Since I was accustomed to his restaurant’s food, my friend’s four year old birthday parties were…interesting. I’d snub the hot dog stand ( << thank God ) & turn down Funfetti cake.
Instead My requests were black beans, fresh guac, & homemade tamales.
LOLZ.
Anyway, to this day I’m still obsessed with chips, salsa, & guacamole. It’s by far my favorite cheat treat. Throw in a margy-poo ( w/ a half salted rim ) & I’m golden. This guacy recipe is the exact one my dad’s restaurant served, so I’m pretty excited to share.
Quick skinny tip: instead of regular chips I use endive lettuce as “chips.” For guests, I’ll serve a bowl of all-natural blue corn chips instead of sickie Lay’s, Doritos, or Fritos.
And trust me, you’ll love the endive “chips”- they taste insane with fresh guac. Enjoy!

Skinny, Spicy Guac
* Serves 3 to 4 peeps
4 ripe avos
1 handful of red onions, chopped
1/2 Roma tomato, chopped
1/2 jalapeño, diced into tiny pieces
1 lime, squeezed
1/2 lemon, squeezed
3 pinches of cilantro, chopped
3 pinches of parsley, chopped
1 garlic clove, pressed
A sprinkle of sea salt ( I like pink sea salt from Trader Joe’s )
A dash of black pepper
+ Directions: cut avos in halves. Take out the seeds. Remove avocado & add to a big bowl. Mash avo with a fork or spoon. Add the rest of the ingredients ( besides the salt & pepper ). Put into a small serving bowl. Sprinkle sea salt & black pepper. Add a cilantro leaf for garnish.








I am def. going to have to try out this guac recipe – I have been missing mexican style dishes, *especially* home made tamales since I’ve moved. Restaurants here just can’t seem to get it perfect!

I was wondering what made it skinny…I love guac and this isn’t too far from what I make, but I’ve always thought of it as pretty calorie dense. Then it dawned on me, 3-4 servings! I’m the only guacamole fan at my house, so I end up eating most all of it.
