A good friend of mine was released from the hospital today after hip surgery. I made this healthy version of “ice cream” for her because who doesn’t love frozen sweets…ESP after the sicko hospital?!

Lately I’ve become obsessed with two-three ingredient recipes.

Whyyyyy? Obvious reasons.

They’re quick + easy. But even more so, there’s not a million ingredients. Smaller recipes contain less cals/sugar/carbs. No one wants to eat something filled with ingredients that they can’t pronounce. Right ; )?

My typical rule of thumb: I try to steer clear of grocery store items that have more than five ingreds. If you don’t know what they are then either look into it ( << you know, Google.com…don’t turn a blind eye to what you’re eating! Be informed! ) or MOVEEEE on down the aisle.

Anyway to make this combine pineapple slices, mint leaves, & pomegranate seeds in a food processor. Freeze for an hour. Add mint + pomegranate seeds for garnish.

Ta da.

Totally a cure for anyone’s sweet tooth ; ).
